It has been found that at the rate of emulsification of 5.000 rpm there are no significant changes using both the complete mixing technology and the phase inversion technology. The effect of the temperature on the disperse system stability has been studied, and the temperature range for transporting and filling the cream into tubes has been determinedЗдійснено дослідження впливу технології виготовлення крему та швидкості емульгування на дисперсні та структурно-механічні показники, за якими встановлено, що при швидкості емульгування 5000 об/хв за технологіями повного змішування та інверсії фаз не спостерігається суттєвих змін.
